Drop Top

Full of complexity and layers, this apple wine boats high levels of tannins and aromatics once we "drop" the top. Made with mechanically harvested apples from our own Orchard, we wildly fermented this bad boy to showcase the personality of this fruit. Drop Top highlights the innovative research on mechanical harvesting we are doing with Cornell University's College of Agriculture and Life Sciences through a New York Farm Viability Institute Grant.
